1. Basic crepes

- Eggs- 2 nos
- Milk- 250 ml
- Sugar- 50 gms
- Melted butter- 50 gms
- Refined flour- 200 gms
- Salt- 5 gms

Method
Mix the beaten eggs, milk, 2 tablespoons of melted butter, vanilla essence, and salt. Whisk this mixture with a wire whisk and blend until it attains the required consistency. Now, add sugar, flour and blend well to form a smooth batter. Heat an 8 to 10-inch crepe pan or a skillet over medium to high flame and brush butter on it. Now scoop and pour 2 tablespoons of batter( for an 8-inch pan). Tilt the pan in a circular motion so that the batter can cover the pan surface evenly. After two minutes or getting a light brown color, remove the crepe from the pan or turn and brown the other side too, if needed. Serve your tasty Crepe with dusted icing sugar, fruit compote, or a dollop of cream.
2. Frittata
Ingredients
- Bell peppers julienne- 100 gms
- Butter- 20 gms
- Sliced mushrooms- 50 gms
- Chopped spring onion- 50 gms
- Eggs- 6 nos
- Minced garlic- 10 gms
- White wine- 30 ml
- Grated cheese- 50 gms
- Refined oil- 30 ml
Method
Melt butter in an omelet pan and sauté mushrooms along with peppers and spring onion until they become transparent. Now turn the heat to medium. Beat eggs with garlic, salt, and wine until they blend nicely. Mix this egg mixture into the mushroom mixture. Do not stir this mixture, instead cook slowly until the sides are bubbling. Finally, sprinkle cheese on the top and place it in a broiler oven until the cheese is browned and set the eggs. Now, serve your hot Frittata for a better start.
3. Bacon and Egg Breakfast Bun
Ingredients
- Burger buns- 6 nos
- Sliced bacon- 6 nos
- Minced fresh mushrooms- 100 gms
- Chopped onion- 50 gms
- Chopped green pepper- 50 gms
- Eggs- 6 nos
- Low-fat milk- 100 ml
- Sliced cheese- 6 pcs
- Salt- as required
Method
Slice about ¾ inches from the top of buns and scoop out the inner part till the bottom using a fork. Make sure that you leave 1/2 inch wall all around. Now, cook the sliced bacon in a pan or skillet over medium heat until it becomes crisp. Drain well, crumble, pour off and discard the fat in the bacon. Add mushrooms, onion, pepper in the pan and cook them for 5 minutes not turning them brown. Stir in drained bacon into it.
Now, beat the egg and milk and pour this mixture into the pan over the vegetables. As the mixture begins to set, draw an inverted pancake turner completely across the bottom and sides of the pan, forming large soft cubes. - Refined flour- 250 gms
- Baking powder- 10 gms
- Egg- 2 nos
- Powdered sugar- 50 gms
- Milk- 300 ml
