- Coffee Mousse
Ingredients
- Milk – 300 ml
- Egg – 3 nos
- Coffee powder – 20 gm
- Sugar – 60 gm
- Gelatine – 10 gm
- Cream – 50 ml
- Dry cherries – 10 nos
Method
Hydrate and dissolve gelatine in lukewarm water and mix the coffee powder in the little warm water. Make custard using egg yolk, sugar and milk then, add gelatine into this and the coffee powder mix. Swiftly cool this on a bed of ice. Beaten up the egg white with cream and add this smooth mix to the custard. Pour in glasses and decorate with dry cherries and chocolate. After keeping them in the refrigerator for 2 hours, have your delicious Chocolate Mousse.
- Devil’s Food Cake
Ingredients
- Melted dark chocolate – 240 gms
- Cooking butter – 440 gms
- Brown sugar – 240 gms
- Golden syrup – 4 tbsp
- Flour – 500 gms
- Cocoa powder – 120 gms
- Baking soda – 2 tbsp
- Eggs - 6 nos
- Milk -240 ml
Method
Melt the butter and chocolate together and keep them aside. Sieve the flour, baking soda, cocoa powder and keep it aside. Beat sugar and eggs in a bowl using a wire whisk to make it fluffy. Add butter-chocolate mixture into this egg mix. Mix the flour into this and fold properly without over mixing. Add milk into this and pour into the cake mold then, bake it at 180 degrees celsius for 45 minutes. The exotic Devil’s Food Cake is ready now.
- Baked American Cheese Cake
Ingredients
- Philadelphia cheese – 1100 gms
- Castor sugar – 315 gms
- Corn flour - 45 gms
- Egg whites – 4 nos
- Egg yolk – 4 nos
- Fresh cream – 250 gms
- Frozen Berries -100 gms
- Butter – 100 gms
- Marie biscuit – 1 packet
- Chocolate – 100 gms
Method
Mix fresh cream into the creamed cheese and add egg yolk into this. After mixing properly, add berries and reserve the sauce. Whisk egg white with sugar and fold in the above mixture and finally fold in the cornflour. Place a mold with the base of crushed biscuits and melted butter. Pour the batter in it and bake it on a double boiler for 40 minutes at 180 degrees celsius. Garnish with chocolate and berry sauce on it and your lavish Baked American Cheese Cake is all set now.
- Rich Belgian Chocolate Mousse
Ingredients
- Eggs – 5 nos
- Dark chocolate – 140 gms
- Instant coffee powder – 5 gms
- Rum – 15 ml
- Sugar – 45 gms
Method
Melt chocolate with instant coffee powder. Beat the egg whites with 15 gms of sugar in a bowl and another bowl, mix the egg yolk with the remaining sugar and one tbsp of rum. Mix the egg yolk with the melted chocolate and then carefully mix the beaten egg white into this mixture. Pour this into bowls or glasses and store it in the refrigerator and have it after one or two days to get the rich taste of your Rich Belgian Chocolate Mousse.
- Brioche and Currant Pudding
Ingredients
- Milk – 250 ml
- Sugar – 50 gms
- Egg – 3 nos
- Brioche – 6 slices
- Butter – 50 gms
- Black currants – 50 gms
- Red currants – 50 gms
- Cinnamon powder – as required
- Nutmeg – 5 gms
- Apricot jam – 25 gms
Method
Sandwich the brioche slices with butter and arrange them in the greased baking tray. Boil the milk with sugar, add the egg into it, mix well using a whisk and strain it. Add grated nutmeg and cinnamon powder to get an aroma and flavor. Pour the mixture in the mold which is with brioche slices, then spread raisins, candied fruits, and cashew nuts for garnish. Bake it in double boiling at 200 degrees celsius for 20 minutes. Apply apricot jam as a glaze and take a bite on your flavourful Brioche and Currant Pudding.
