THREE TART RECIPES

1. Key lime Tart

 

Ingredients

• Heavy cream- 2500 gms

• Sugar- 1500 gms

• Condensed milk- 1000 gms

• Egg yolk- 11 gms

• Sugar- 110 gms

• Key lime juice or lime juice- 300 gms

• Lime rind- 20 gms

• Gelatin- 200 gms

• Water- 1000 ml

Method

Put gelatin in water and let it bloom and melt. Whip the heavy cream and cover it safely and then places it in a refrigerator. Beat the egg yolk. Boil the sugar with some water and bring it to 116 degrees celsius. Pour this sugar syrup in beaten egg yolk and beat it all together like sabayon. Next, fold the whipped cream, sabayon, lime juice, and condensed milk together. Put the key lime mixture into the gelatin water and mix them. Try not to over mix and pour this mixture in a tart. Let it set and serve with berry compote. Your tasty Key lime tart is ready now.

2. Jam Tart

 

Ingredients

• Flour- 115 gms

• Sugar- 5 gms

• Margarine- 60 gms

• Baking powder- 2 gms

• Jam- 25 gms

• Coldwater- for mixing

• Vanilla essence- as required

Method

 Sieve flour with baking powder and rub the margarine with fingertips until it looks like breadcrumbs. Add crushed sugar and vanilla essence into it and mix nicely. Knead this into a dough by adding water and roll on a floured slap and cut in the required shape. Grease the tart mold and roll out the dough over it with jam filling. Bake at 160 degrees celsius for 10 to 15 minutes. Your delicious jam tart is ready to serve hot.

3. Chocolate Pear Tart

 

Ingredients

• Flour- 115 gms

• Sugar – 5 gms

• Margarine- 60 gms

• Baking powder- 2 gms

• Coldwater- to mix

• Vanilla essence- as required

For filling

• Cocoa powder- 50 gms

• Plain flour- 50 gms

• Unsalted butter- 100 gms

• Grain sugar- 180 gms

• Caster sugar- 100 gms enough

• Icing sugar- 5 gms

• Egg- 7 nos

• Pears- 4 nos

• Vanilla essence- as required

Method

Sieve flour with baking powder and rub the margarine with fingertips until it looks like breadcrumbs. Add crushed sugar and vanilla essence into it and mix nicely. Knead this into a dough by adding water and roll on a floured slap and cut in the required shape. Grease the tart mold and roll out the dough over it.

Method for filling

Peel and core the pear. Roll these pears over the caster sugar and arrange them on the uncooked dough. Now, melt the butter and add cocoa powder and stir until smooth. Whisk egg with sugar and add the cocoa mixture into it. Sift flour over the top of the mixture and fold by mixing vanilla essence. Pour this filling over the top of arranged pears and bake at 160 degrees celsius for 10 to 15 minutes. After cooling it down, sprinkle some icing sugar for garnish and serve your mouth-watering Chocolate Pear Tart.
