NORTH INDIAN BREAKFAST RECIPES

 

1-Paneer Paratha

 

Ingredients

 

  • Grated paneer- 70 gms
  • Wheat flour- 80 gms
  • Salt- 5 gms
  • Chopped onion- 5 gms
  • Chopped ginger- 3 gms
  • Chopped green chili- 5 gms
  • Chopped coriander leaves – 5 gms
  • Oil- 5 ml
  • Melted Butter- 5 ml
  • Turmeric powder- 2 gms
  • Coriander crushed powder- 3 gms
  • Roasted cumin powder- 3 gms

Method

 Add ginger, onion, and green chili into the heated oil and sauté it well. Add turmeric powder, crushed coriander powder, roasted cumin powder, and salt. Add grated paneer to the above mixture and sauté it for some time adding coriander leaves to it. Mix them all and check for seasoning.

    Sieve salt and wheat flour. Add oil and water (as required) and knead it to a smooth dough. Cut the dough into equal wt. of 70 gm “peda”.

   Make a depression in the center and stuff it with the above mixture (small fillings of 20 gm each) and seal the peda.

   Using a hand roller, roll the peda into a round shape(8 diameters), making sure that the stuffing is not coming out of the dough.

    Grill these on a hot pan till both sides are done. Remove these parathas from the pan and serve topped with butter on it.

 

2-Lamb Cutlet

Ingredients 

  • Lamb mince(fine mince with fat) - 500 gms
  • Turmeric powder – 1 tsp
  • Kashmiri chili powder – 1 tsp
  • Bread slices  - 2 nos
  • Mashed potatoes – 200 gms
  • Eggs( beaten) – 8
  • Salt – to taste
  • Finely chopped onion – 150 gms
  • Finely chopped green chilies – 3
  • Chopped coriander – 25 gms
  • Chopped ginger – 15 gms
  • Oil – to fry
  • Breadcrumbs – enough to make cutlets

 Preparation

Remove the bread crusts. Soak those bread slices in the water and squeeze them dry.

Method

 Make sure that the lamb mince is half cooked. Then, mix all the ingredients except the oil, eggs, and breadcrumbs. if required, add some beaten egg to bind the mixture.

   Shape into cutlets. Chill the cutlets for some time.

Heat the oil, beat the remaining eggs until they make froths. Dip the cutlets in beaten egg and fry.

Your lamb cutlets are ready.

 3- Dalia khichdi

Ingredients

  • Daliya – ½ cup – 75 gms
  • Water – 1 ¼ cup – 150 ml
  • Onion – 1 finely chopped
  • Green chili – 1 finely chopped
  • Ginger- garlic paste – ½ tsp
  • Carrot – 1 finely chopped
  • Beans – 5-6 finely chopped
  • Chilli powder – ½ tsp ( if needed)
  • Coriander powder – ½ tsp
  • Salt – to taste
  • Oil – 1 tbsp
  • Cumin seeds – ½ tsp
  • Mustard – ½ tsp

 

Preparation

 Chop all the vegetables finely. Soak daliya in ¼ cup of hot water for 10 minutes.

 

Method

 Heat oil in a pan, add cumin and mustard seeds, when it splutters, add finely chopped onions and sauté till turn transparent.

   Add one finely chopped green chili and ginger- garlic paste and sauté for a few more minutes. Add carrot, beans, chili powder, coriander powder into it, and salt if required.

   Now add the soaked daliya, 1 cup of hot water in the pressure cooker, and wait for 3 whistles.

  Once the pressure is released, open it and serve it with curd or raita, or pickle.

  This khichdi should not be like Upma but should be slightly mushy.
